Hazelnut-Crusted Chicken Breasts

Ingredients:
4 whole boneless skinless chicken breasts
Salt and freshly ground pepper
3 Tbsp. unsalted butter melted with
2 Tbsp. extra-virgin olive oil
4 Tbsp. Dijon mustard, divided
1 cup hazelnuts


Pre-heat 400 F oven


Directions:
Rinse and dry the chicken breasts. Pound to flatten and make the breasts an even thickness. Season with salt and pepper.

Whisk mustard into melted butter and oil.

Spread the ground nuts evenly on a piece of wax paper.

Prepare a baking dish with butter

Dip the breasts into the butter and mustard mixture. Coat both sides with nuts. Place it in the prepared dish. Put dish in the center of the oven and bake for 20 minutes, depending on the size of the breasts. Remove from the oven, transfer to warm plate and serve it right away.
