Omega Truffles

Makes 16 truffles
Ingredients:
Dry:
2 cups ground flax meal
3 tablespoons currants
3 tablespoons non dairy, grain malt sweetened chocolate chips
1/8 tsp. sea salt
Wet:
Juice of 1 orange
1/4 cup tahini or almond butter
1/4 cup maple syrup
Coating Options:
Toasted shredded coconut
Cocoa or carob power
Chopped walnuts
Cinnamon
Toasted sesame seeds
Directions:
In a medium sized bowl, combine dry ingredients. Separately, combine wet ingredients. Blend wet into dry and mix thoroughly. Adjust ingredients if needed to form a thick, sticky dough. Let rest for a few minutes. Form into small balls and roll in coating of your choice.
