Tropical Mojo over Tilapia

Ingredients:
2 cups tropical fruit, such as pineapple, mango, passion fruit, etc. either in a jar or can, or fresh if possible
1/2 cup grapefruit juice
1/2 cup fresh lime juice
1/2 cup orange juice
1 red onion, diced
1/4 cup garlic, chopped
1/4 cup ginger, chopped
1 tbsp. brown sugar
1 bunch cilantro, minced
2 cups light olive oil
Salt and pepper to taste
4 pieces tilapia
 

Directions
To make the mojo sauce:
Place the tropical fruit in a blender or food processor. Puree to a pulp. Add the juices and red onion. Pulse again. Next, add the garlic, ginger and sugar and cilantro. Pulse again to mix.
 
To make the fish:
Preheat oven to 400 degrees. Place fish on a greased baking sheet or in a greased baking dish. Season both sides with salt and pepper. Place the fish on the baking sheet or dish and place in the oven. Bake until finished, about 20-25 minutes. Remove fish from oven, and place on plate. Pour 1/2 cup to 3/4 cup of sauce over each piece of fish. Serve with rice, pasta, or by itself. Garnish with fresh lime. Enjoy!
