Veggie Sausage and Peppers

Serves 6

Ingredients:
Olive oil
8 links vegetarian sausage
1 large red or yellow onion, thinly sliced
Sea salt
1 red pepper, seeded and thinly sliced
1 yellow pepper, seeded and thinly sliced
1 green pepper, seeded and thinly sliced
1/3 cup fresh basil leaves
Black pepper
Hot sauce, optional


Directions:
Heat 2 tablespoons of olive oil in a large fry pan over medium heat. Brown the sausage in the oil until nicely golden on all sides. Remove the sausage and drain on a plate lined with paper towels.

Add the onions and peppers to the hot pan. Sprinkle with a few pinches of sea salt. Saute the onions and peppers about 5 minutes or until the onions start to become translucent. Meanwhile, slice the sausage links on an angle into 1/2 inch thick pieces.

Add additional salt, basil leaves, and black pepper to taste to the onions/pepper mixture. Return sausage to the pan on top of onions and peppers and lightly toss. Simmer on additional 5 to 10 minutes. Add a touch of hot sauce if you wish and serve warm for a hearty breakfast.
