Cherry-Pear Crisp

Serves 4

Ingredients:
3 ripe pears, cored and thinly sliced
1 1/2 cups pitted cherries (if using frozen – thawed & drained)
Pinch of sea salt
1 teaspoon vanilla
1 tablespoon arrowroot powder
Splash of apple juice
1/2 cup maple sugar

Topping:
2 cups rolled oats
1/2 cup brown rice flour
1/4 teaspoon sea salt
1/3 cup maple or date sugar
1 teaspoon cinnamon
1/3 cup brown rice syrup
1/3 cup safflower oil
1 teaspoon vanilla


Preheat oven to 350 degrees.

Directions:
Toss pears and cherries with salt, vanilla, arrowroot and maple sugar. Place mixture in a lightly oiled 9 x 9-inch baking dish. In a separate bowl, combine topping ingredients and mix well. Spread evenly over fruit and bake 40 – 50 minutes. Serve warm, perhaps topped with a scoop of nondairy ice cream for a treat!
