Steak and Eggs

Serves 4
Ingredients:
For the steak:
1 teaspoon salt
1 teaspoon pepper
1 1/2 lbs. flank steak
3 Tablespoons olive oil
1 clove garlic, minced
1 sprig thyme
For the Eggs:
6 oz. oyster mushrooms, cut in half
1 small shallot, minced
4 eggs
1/4 cup heavy cream
2 Tablespoons olive oil
Directions:
Sprinkle salt and pepper on both sides of flank steak. Combine oil, garlic, and thyme, and smear over meat. Cover and let marinate in refrigerator overnight.
Using a cast iron grill pan, grill both sides of the steak until medium rare. Let meat rest for 5 minutes before slicing
Crack eggs into a bowl and beat with heavy cream and a pinch of salt. In a nonstick pan, saute the shallots with olive oil over medium heat. Add mushrooms and saute over high heat until golden brown. Set mixture aside. Add egg to pan, and stir gently over medium heat until curds form.
Thinly slice the flank steak against the grain, and arrange on plate. Place a mound of egg on the steak, and garnish with mushrooms.
