Arroz (Brazilian-Style Rice)

Ingredients:
4 cups long grain rice
8 cup water
1 medium onion, chopped
3 tablespoons olive oil
Salt to taste
Directions:
Heat the olive oil in a skillet over medium heat. Add onion, cook until translucent. Add rice and saute until grains become shiny. Add water, cover the pan and cook over low heat until water is absorbed and grains are tender.
