RUNNER UP RECIPE
FRESH AND SPLIT PEA SOUP

Ingredients
1/2 lb. split green peas soaked overnight
1 medium onion, chopped fine
2 cloves of garlic
1 tbsp. butter
1/2 cup crushed tomatoes
1 and 1/2 cups frozen green peas
32 oz. chicken or vegetable stock
Salt and pepper to taste
Directions:
Bring the soaked split peas to a boil in the stock and cook until tender and thick. In a small pan, sauté the onion in butter, when the onion is beginning to get translucent, add the garlic until they are lightly brown and soft.
When the split peas are cooked and have made a thick soup, add in the onions, garlic, tomato and green peas and cook for 15 extra minutes to help the flavors blend. Add salt and pepper to taste and serve.
This is a very fresh tasting soup that can also be served as a flavorful sauce over rice.
