Mediterranean Spring Roll

Ingredients:
1 small jar roasted peppers
3/4 cups pine nuts
1 cup cooked chopped spinach
1/2 cup feta cheese
1 tablespoon garlic, either paste or minced
Fresh oregano, thyme and basil to taste, minced
Filo dough
Cooking spray


Preheat oven to 375 degrees.

Directions:
In a hand chopper, combine first 6 ingredients. Blend to incorporate. Set aside. Carefully unwrap filo dough. Unroll flat onto counter top or work surface. Cut sheets in half so you have a square stack of filo, about 6 inches on each side. One by one, take a sheet and spray with cooking spray, placing on a baking sheet so it sits like a diamond. Do this with 6 sheets, stacking them on top of the other. Take filling and place 3 tablespoons in the bottom corner. Fold the corner up toward the top. Then fold the right corner in toward the middle, flowed by the left corner. Continue to roll toward the top until the dough forms a roll. Spray the roll with the spray and bake for 20 minutes or until golden brown.
