Cardamom Roasted Chicken

Serves 4
Ingredients:
1 whole fresh chicken, approximately 4 lbs. (Use free-range or kosher chickens)
3 tablespoons butter, at room temperature
1 tablespoon whole cardamom, freshly ground
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
2 lemons
1 thyme bunch
Preheat the oven to 450 degrees.
Directions:
Mix the spices into the butter, and smear the mixture all over the chicken, inside and out, reserving about a tablespoon for later. Cut the lemon into quarters, and stuff inside the cavity with the thyme. Place chicken on a rack in a roasting pan, breast side down. Roast in oven for about 20 minutes. Turn the bird breast side up, baste with remaining butter, and lower heat to 350F. Roast until an instant-read thermometer inserted into the thigh reads at least 160F. Total roasting time should be about an hour. Let chicken rest for about 5-10 minutes before carving.
